back to Healthy....

I really wanted to get back to some healthy topics on the blog......a few weeks before leaving for Costa Rica I sort of took a break in the exercise department and then kind of let myself eat whatever in anticipation of vacation and indulging!!! So when I got back from vacay I kind of....sort of....just kept up with the vacation style!! But I can really only go so long with that and then I start to feel bloated and yuck and the worst part, feeling like I need a nap everyday, no energy. It really is amazing how bad food can bring you down like that!

So a week ago I cut it out, got back to the basement to workout and cut out the crappy food! And it really does floor me everytime that within 2 days you can drain the excess fluid and release all that bloat and instantly be awake!!!!

wanted to share a simple little entree I had last week

Oregano chicken

8 chicken thighs
2 tsp dried Oregano
salt and pepper to taste
1/4 Cup Olive Oil
1/2 lemon, juiced

Oven preheat to 450

Wash chicken and pat dry. In a small bowl mix oregano with salt and pepper to your liking. I just throw in a few shakes. Rub this all over the chicken pieces, stuffing some under the skin - since I tend to peel my skin off once it hits my plate. Put chicken in a 9x13.

Whisk the oil and lemon juice together. pour HALF of the mixture over the chicken, tossing and coating the pieces. Bake for 15 minutes. take the chicken out, flip the pieces over, add remaining oil and bake another 15 minutes.

a few notes - please use Chicken thighs with the bone. one of the reasons that this is so flavorful and tender is because of the bone. Using the boneless skinless thighs just takes the whole moist tender element out of it..in my opinion!

I have also done this in the crock pot - slow cook for 4 hours just dumping the whole oil/lemon mixture over the chicken and let it coook!

the chicken is great warm, room temp, or cold!!
