What I am eating....

this week I'm going to tell you just exactly what I am eating each day. I do want to put a big preface out there first though!!!!

First off - It has been 6 years since I started paying attention to my food and ingredients. I used to drink my coffee and tea with sugar, I used to drink a coke everyday, I loved sugar and the taste of it. I can honestly say it has been a long road of changing the taste buds. It took me 3 years to actually stop buying coke at the store. I still drank it on occasion...but it wasn't until about a year ago I actually drank some coke and really didn't like it anymore. I was able to switch to diet coke and diet dr pepper if I needed some soda on occassion without the sweet. But again I started to taste the chemicals and notice the bloating, the headache, the pockets of fat on your inner thighs that form(um, yuck) and got to the point where water is what my body craves!! My point is....do not expect to be able to change your food choices overnight! It is a process, it takes time and energy and the desire to change. Just take it slow and steady..you can do it!!!

Which brought me to a thought about what I eat, how it tastes to me...and how it might taste to you. It's going to be different! I was reminded of this while giving my brother-in-law some Honey cake(kinda like banana bread) I had made - he said this is really good, it just needs more sugar - of course me, DH and the kids didn't notice because we aren't used to "all that extra sugar" Another point....if I post something here and you give it a try and think...eh....kinda bland, needs more sugar, or whatever! just tuck it away for a later date and try it again...and be on your way to real food heaven!!

Yesterday was Sunday.........and it's the only day of the week we don't eat real meals at the table, so it's very relaxed. Sunday morning before church I always boil up a pan of soft boiled eggs...do you eat these?? I never ate soft boiled eggs as a kid, didn't even know people ate them not hard boiled!!! Not till I met my hubby. So anyway I had 2 boiled eggs in the morning and a few cups of coffee!! and a pear.

For lunch I made myself a big salad. I always have a variety of lettuce in the fridge, so I chose some romaine and red leaf - these are my 2 staple greens that I use for any salad. I also threw in some arugula(kind of new for me) and some kale.

sidenote - I can make my lettuce last for weeks in the fridge - when I bring it home from the store, I chop off the stalk at the bottom, I lay all the leaves out on the counter and leave them out until most of the water has dried up - then flip them and again wait, depending on your weather, sometimes it's MANY hours!! once they are dry enough(maybe I dab with a towl too) I stick a paper towel in the dry produce bag throw a bunch of leaves in, lay another paper towel and throw in more leaves. Getting all the moisture out of the bag saves the lettuce...that way it lasts for weeks and I use it all up. Otherwise, I was always throwing away bad lettuce, making it expensive!!

back to my salad>>>>> I also added some handfuls of Broccoli slaw to the bowl, that stuff is good and crunchy! I cut up some cucumber, tomato and red onion cause I always use those 3 items on salads, I just do!! Then I kind of poked around for other stuff to add, I threw in some raisins and sunflower seeds and red bell pepper. I threw down some salt and pepper, olive oil and red wine vinegar, mixed it up and it was yummy!!

oh ya, while I was making the salad, I ate a handful of lays potato chips..cuz the kids had them out! And at some point I snacked on some almonds cause nuts are so good for ya!!!

For dinner quesadilla's - 2 whole wheat tortilla's with a bit of cheddar and mozzarella cheese, added a handful of some canned black beans(drained and totally rinsed) on one half, then folded it in half. I toasted the tortillas on both sides waiting for the cheese to melt..set them on a plate! then in a bowl I had mixed an avocado, mashed it with a jalepeno, tomatoes, lime juice, S&P, cilantro and red onion and then smeared the whole guacamole concoction on top of the tortillas and feasted while watching football - it was so good!!

After dinner I had a honeycrisp apple dipped in peanut butter.

By the way, did I mention I am on a mission to lose what is left of the holiday pounds and I was down another pound this morning!!! My tummy feels so nice and not bloated, I am gearing up for that tropical place next month where I get to do the bikini thing!!
